PRODUCTION METHOD: The grapes are harvested by hand and undergo white vinification with gentle pressing. After the addition of selected yeasts, fermentation lasts approximately 15 days at a controlled temperature. The wine is then stored in stainless steel tanks until the sparkling phase.

SPARKLING PROCESS: Sparkling is achieved through secondary fermentation in autoclave, using selected yeasts and sugars for a period of 60 days. Bottle ageing lasts for one month.

TASTING NOTES: Golden yellow in colour with greenish highlights, featuring a fine and persistent perlage that enhances its bright appearance. Intense aromas of sweet acacia and linden blossom, accompanied by fruity notes of apple and pear. On the palate it is harmonious, enveloping and silky, enriched by appealing honeyed notes that give a velvety softness.

FOOD PAIRING: Excellent with dishes featuring dried fruit. Ideal with blue cheeses such as Gorgonzola and Taleggio.
