Wine Details
Made from Manzoni Bianco 13.0.25, this wine comes from Sarmede, Treviso, with fruit grown in the Pontesei vineyard in the Treviso hills. The site benefits from excellent exposure and a good temperature range, helping the grapes develop balance and character. Production is kept to around 140 q/ha.
The vines are trained using a double inverted system, with leaf removal and thinning carried out when required. The vineyard enjoys a cool temperate climate, with excellent ventilation, good annual rainfall, and low relative humidity.
In the cellar, the wine undergoes cryomaceration at a controlled temperature overnight, followed by soft pressing and separation of the free-run must. Fermentation takes place in thermo-controlled stainless steel tanks, with the wine then aged for 4 months. The foaming stage follows the Martinotti method for 35 days.
With 11.5% ABV and 5 g/l residual sugar, it is fresh, balanced, and highly versatile. Serve at 6–8°C in a long-stemmed glass. It is excellent as an aperitif and pairs particularly well with a variety of cicchetti.
