Off the skins, with soft pressing and fermentation in first and second passage tonneaux.
Ageing
Matured in tonneaux for 6 months on its yeasts, with periodic bâtonnage, then aged in bottle, gaining further complexity over the years.

Deep straw yellow with beautiful golden notes.
Serving Temperature
10–12°C.
Tasting Notes
Great structure and fullness, while maintaining excellent freshness and flavour, with strong ageing potential.
Aroma
Excellent intensity and finesse, followed by clear notes of white spice, chamomile, and Mediterranean scrub.
Pairings
Ideal with rich, flavourful dishes that have good structure. Try it with Sardinian fregola with seafood and bottarga.
