After pressing, the grapes undergo around 10 days of maceration to extract colour, flavour and structure. The wine is then kept in stainless steel tanks to preserve its freshness and character.

Aged for 8 months in bottle
Tasting Notes
Ruby red in colour with purple reflections. The nose is intense, with notes of wild woodland fruit, especially the wild cherry typical of the Asolani Hills. On the palate, it is dry, warm and intense, with moderate tannins and a well-balanced finish.
Food Pairing
An excellent match for red meats and hearty stews.
Regional Pairing
Particularly enjoyable with Valcavasia chestnuts, stuffed quail and polenta.
