Pecorello is a Calabrian native so rare it risked being forgotten entirely, rescued here by Ippolito through years of quiet dedication and pride in the region's roots. Hand-harvested in early September, cold-settled, and fermented slowly in steel to let the variety speak for itself.

Description

Made from Pecorello grapes, an ancient native variety of Calabria that deserves to be rediscovered and celebrated. For us at Ippolito, it represents the pride of passionate research and dedication to our region’s winemaking heritage.

 

Production Technique

The grapes are hand-harvested in early September, followed by cold static settling. Fermentation takes place in stainless steel tanks at a controlled temperature, with maturation continuing in steel until the end of January.

Characteristics

Bright straw-yellow in colour, with a complex, Mediterranean and elegant bouquet featuring notes of citrus, yellow-fleshed fruit, and subtle mineral hints. On the palate, it is vibrant, well-balanced, and long-lasting.
