Winemaking
The grapes are harvested by hand, with both alcoholic and malolactic fermentation taking place in large concrete tanks. The wine is then aged in a selection of egg-shaped vessels, including Nomblot, Clayver, Porcellanea and Sirio, with a small proportion also matured in oak barrels. This careful combination of ageing methods helps preserve purity of fruit while adding texture, depth and complexity.
